Heavenly Lemon Blueberry Muffins

Ingredients

1 1/2 cups all-purpose flour
3/4 cup granulated sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 large egg
1/3 cup milk
1 tsp vanilla extract
Zest of 1 lemon
1 cup fresh blueberries
2 tbsp turbinado sugar for topping

Instructions

1. Preheat oven to 375°F and line a muffin tin with paper liners.
2. In a large bowl, whisk together flour, sugar, salt, and baking powder.
3. In another bowl, combine vegetable oil, egg, milk, vanilla extract, and lemon zest.
4. Add wet ingredients to dry ingredients and stir until just combined.
5. Gently fold in the blueberries.
6. Spoon the batter into the prepared muffin cups, filling them about three-quarters full.
7. Sprinkle turbinado sugar on top of each muffin.
8. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
9. Let muffins cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Storage

Store in an airtight container at room temperature for up to 3 days.

Reheating

To reheat, warm in the microwave for 15-20 seconds or in an oven at 300°F for 5-7 minutes.
