Hearty Winter Vegetable Soup
A comforting and flavorful winter vegetable soup that warms the soul with each spoonful. Packed with seasonal root vegetables and aromatic herbs, this dish is perfect for a cold day.

Ingredients
2 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
3 carrots, sliced
2 parsnips, sliced
2 potatoes, diced
1 small butternut squash, peeled and cubed
6 cups vegetable broth
1 tsp dried thyme
1 tsp dried rosemary
1 bay leaf
Salt and pepper to taste
1 cup kale, chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, cook until softened.
3. Stir in carrots, parsnips, potatoes, and butternut squash, sauté for 5 minutes.
4. Pour in vegetable broth, add thyme, rosemary, bay leaf, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for 25 minutes or until vegetables are tender.
6. Stir in kale and cook for an additional 5 minutes.
7. Remove bay leaf and serve hot.
Storage
Store in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat gently on the stove over medium heat or in a microwave-safe bowl at 50% power.
