Hearty Winter Vegetable Beef Soup

Ingredients

1 lb beef stew meat, cubed
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
2 large carrots, sliced
4 ribs celery, sliced
2 large potatoes, diced
1 cup frozen peas
1 cup corn kernels
1 can (14.5 oz) diced tomatoes
4 cups beef broth
2 tsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
1 bay leaf
Salt and pepper, to taste

Instructions

1. Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
2. Add onion and garlic; cook until onion is translucent.
3. Stir in carrots, celery, and potatoes; cook for 5 minutes.
4. Add beef broth, tomatoes, Worcestershire sauce, thyme, rosemary, bay leaf, salt, and pepper.
5. Bring to a boil, then reduce heat to low and simmer for 1 hour.
6. Add peas and corn; continue to simmer for another 15 minutes.
7. Remove bay leaf before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.

Reheating

Reheat gently on the stovetop over medium heat until heated through, stirring occasionally.
