Hearty Winter Broth

Hearty Winter Broth is a rich and comforting soup perfect for cold days. This nourishing dish combines tender root vegetables, savory herbs, and succulent beef, creating a wholesome meal that warms both body and soul.

Ingredients

2 lbs beef chuck roast
3 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
4 carrots, sliced
3 parsnips, sliced
2 potatoes, diced
3 stalks celery, sliced
8 cups beef broth
2 cups water
1 bay leaf
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Brown the beef on all sides, then remove it and set aside.
3. Add onions and garlic to the pot and sauté until translucent.
4. Stir in carrots, parsnips, potatoes, and celery; cook for 5 minutes.
5. Return beef to the pot, add beef broth, water, bay leaf, thyme, and rosemary.
6. Bring to a boil, then reduce heat and simmer for 2 hours, until beef is tender.
7. Remove beef, shred it, return to pot, and season with salt and pepper.

Storage

Refrigerate in an airtight container for up to 4 days.

Reheating

Reheat gently on the stove over medium heat until warmed through.
