Hearty White Chicken Chili

Ingredients

2 lbs boneless skinless chicken breasts
1 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
2 15oz cans of white beans, drained
4 cups chicken broth
1 4oz can diced green chilies
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp cayenne pepper
Salt and pepper to taste
1 cup sour cream
1/2 cup heavy cream

Instructions

1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
2. Stir in minced garlic, cooking until fragrant, approximately 1 minute.
3. Add chicken breasts to the pot and pour in chicken broth. Bring to a simmer and cook until the chicken is fully cooked and easy to shred, about 15-20 minutes.
4. Remove chicken from the pot, shred it with two forks, and return to the pot.
5. Stir in the white beans, diced green chilies, ground cumin, dried oregano, cayenne pepper, salt, and pepper. Simmer for an additional 10 minutes to marry flavors.
6. Reduce heat to low, then stir in sour cream and heavy cream, ensuring the mixture is well-blended and heated through.
7. Serve hot with your choice of toppings such as shredded cheese, chopped cilantro, or tortilla strips.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stove over low heat, stirring occasionally until heated through.
