Hearty Vegetable Soup

A nutritious and comforting homemade vegetable soup featuring seasonal produce and aromatic herbs, perfect for a family meal.

Ingredients

2 tbsp olive oil
1 onion, diced
2 cloves garlic, minced
3 carrots, sliced
2 stalks celery, chopped
1 zucchini, chopped
1 potato, diced
1 cup green beans, trimmed
1 can (14.5 oz) diced tomatoes
6 cups vegetable broth
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
1 bay leaf
1/4 cup fresh parsley, chopped

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add the onion and garlic, sauté until translucent.
3. Stir in carrots, celery, zucchini, and potato, cook for 5 minutes.
4. Add green beans, diced tomatoes, vegetable broth, salt, pepper, thyme, and bay leaf.
5. Bring to a boil, then reduce to a simmer for 25-30 minutes, until vegetables are tender.
6. Remove bay leaf, stir in fresh parsley, and adjust seasoning if needed.
7. Serve hot garnished with additional parsley.

Storage

Allow soup to cool completely, then store in an airtight container in the refrigerator for up to 5 days.

Reheating

Reheat on the stovetop over medium heat until warmed through, or microwave in a covered microwave-safe dish.
