Hearty Vegetable Beef Stew
A traditional vegetable beef stew rich in hearty flavors, combining tender beef, fresh garden vegetables, and aromatic herbs simmered to perfection.

Ingredients
1.5 lbs beef chuck, cubed
2 tbsp olive oil
1 large onion, chopped
3 carrots, sliced
3 celery stalks, diced
4 cloves garlic, minced
4 cups beef broth
2 cups water
2 large potatoes, cubed
1 cup green beans, trimmed and halved
1 cup peas
1 can (14.5 oz) diced tomatoes
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
2 tbsp fresh parsley, chopped
Instructions
1. Heat olive oil in a large pot over medium heat. Add beef and cook until browned on all sides.
2. Remove beef and set aside. In the same pot, add onions, carrots, celery, and garlic; sauté until vegetables are tender.
3. Return beef to the pot and add beef broth, water, potatoes, green beans, peas, diced tomatoes, Worcestershire sauce, thyme, and rosemary.
4. Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, or until beef is tender.
5. Season with salt and pepper to taste. Stir in fresh parsley before serving.
Storage
Store the stew in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat stew in a pot over medium heat, stirring occasionally, until heated through.
