Hearty Turkey Leftover Soup

Ingredients

1 turkey carcass
2 gallons water
1 large onion, chopped
3 carrots, sliced
3 celery stalks, sliced
2 cloves garlic, minced
2 bay leaves
1 teaspoon dried thyme
Salt and pepper to taste
2 cups cooked turkey, shredded
1 cup cooked rice or noodles
2 tablespoons fresh parsley, chopped

Instructions

1. Place the turkey carcass in a large pot and cover with water.
2. Add chopped onion, carrots, celery, minced garlic, bay leaves, thyme, salt, and pepper.
3. Bring to a boil, then reduce heat and simmer for 2 hours.
4. Remove the carcass and strain the broth, discarding solids.
5. Return the broth to the pot, add shredded turkey and cooked rice or noodles.
6. Simmer for an additional 20 minutes.
7. Stir in fresh parsley and adjust seasoning if necessary before serving.

Storage

Allow to cool completely and store in airtight containers in the refrigerator for up to 3 days or freeze for up to 3 months.

Reheating

Reheat gently on the stove over medium heat until warmed through, stirring occasionally.
