Hearty Teriyaki Chicken

A delightful slow-cooked dish featuring tender chicken infused with a rich, homemade teriyaki sauce, perfect for a comforting meal.

Ingredients

3 lbs boneless, skinless chicken thighs
1 cup soy sauce
1/2 cup brown sugar
1/4 cup honey
1/4 cup rice vinegar
1 tablespoon sesame oil
3 cloves garlic, minced
1 teaspoon ginger, minced
1/4 cup water
2 tablespoons cornstarch
1 tablespoon sesame seeds
2 green onions, chopped

Instructions

1. Place chicken thighs in the slow cooker.
2. In a bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, sesame oil, garlic, and ginger until well combined.
3. Pour the sauce over the chicken in the slow cooker.
4. Cook on low for 4-5 hours, or until the chicken is tender and easily shredded.
5. Remove chicken and transfer to a plate, leaving the sauce in the slow cooker.
6. In a small bowl, mix water and cornstarch to form a slurry.
7. Stir the cornstarch mixture into the sauce and cook on high for an additional 15 minutes to thicken.
8. Shred the chicken using two forks and return it to the thickened sauce.
9. Stir well to coat the chicken evenly with the sauce.
10. Garnish with sesame seeds and green onions before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a saucepan over low heat until warmed through, or microwave on medium power for 2-3 minutes.
