Hearty Taco Soup

Ingredients
1 lb ground beef
1 medium onion, chopped
3 cloves garlic, minced
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (14.5 oz) diced tomatoes
1 can (14.5 oz) diced tomatoes with green chilies
2 cups beef broth
1 packet (1 oz) taco seasoning
1/2 tsp cayenne pepper
Salt and pepper to taste
2 cups shredded cheddar cheese
1 cup sour cream
3 green onions, sliced
2 tbsp fresh cilantro, chopped
Tortilla chips for serving
Instructions
1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat.
2. Add chopped onion and minced garlic to the pot and sauté until onion is translucent.
3. Stir in the black beans, kidney beans, corn, diced tomatoes, diced tomatoes with green chilies, beef broth, taco seasoning, and cayenne pepper. Mix well.
4. Bring the mixture to a boil, then reduce the heat to a simmer and cook for 20-25 minutes, stirring occasionally.
5. Taste the soup and adjust seasoning with salt and pepper as desired.
6. Serve hot, garnished with shredded cheddar cheese, a dollop of sour cream, sliced green onions, fresh cilantro, and tortilla chips.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat on the stove over medium heat until warmed through, or in the microwave in 1-minute intervals, stirring in between.
