Hearty Stuffed Pepper Soup

Ingredients

1 lb ground beef
3 large bell peppers, chopped
1 large onion, chopped
3 cloves garlic, minced
1 can (28 oz) diced tomatoes, with juice
4 cups beef broth
1 cup water
1 cup uncooked white rice
2 tsp salt
1 tsp black pepper
1 tsp dried oregano
1 tsp dried basil
1 tbsp Worcestershire sauce
2 tbsp olive oil
Parmesan cheese, grated, for serving

Instructions

1. In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
2. Add chopped onions and garlic to the pot. Sauté until onions are translucent.
3. Stir in chopped bell peppers and cook for another 3 minutes.
4. Add diced tomatoes with juice, beef broth, water, rice, salt, pepper, oregano, basil, and Worcestershire sauce. Stir to combine.
5. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 30 minutes, or until rice is tender.
6. Taste and adjust seasoning if necessary. Serve hot, topped with grated Parmesan cheese.

Storage

Store in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in individual portions.

Reheating

Reheat in a pot over medium heat, stirring occasionally, until heated through. Alternatively, microwave on high for 2-3 minutes, stirring halfway through.
