Hearty Split Pea and Ham Soup

Ingredients

1 lb dried split peas
2 quarts water
2 cups diced smoked ham
1 large onion, chopped
2 carrots, sliced
2 celery stalks, chopped
2 cloves garlic, minced
1 bay leaf
1 tsp salt
1/2 tsp black pepper

Instructions

1. Rinse the split peas under cold water until the water runs clear.
2. In a large pot, combine the split peas and water; bring to a boil over high heat.
3. Reduce heat to low, cover, and simmer for 1 hour, stirring occasionally.
4. Add the diced ham, chopped onion, sliced carrots, chopped celery, minced garlic, bay leaf, salt, and black pepper to the pot.
5. Continue to simmer the soup for another 30 minutes, or until the peas are tender and the soup has thickened.
6. Remove the bay leaf before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stove over medium heat, stirring occasionally, until heated through.
