Hearty Spiced Lentil Soup

Ingredients

1 tbsp olive oil
1 large onion, diced
2 cloves garlic, minced
2 carrots, diced
2 ribs celery, diced
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp smoked paprika
1/2 tsp turmeric
1/4 tsp black pepper
1 1/2 cups brown lentils, rinsed
6 cups vegetable broth
1 can (14 oz) diced tomatoes
1 bay leaf
1 tbsp lemon juice
Salt to taste
Fresh parsley, chopped for garnish

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and sauté until translucent, about 5 minutes.
3. Stir in garlic, carrots, and celery, cooking for another 3-4 minutes until the vegetables begin to soften.
4. Add ground cumin, coriander, smoked paprika, turmeric, and black pepper, stirring for 1 minute until fragrant.
5. Add lentils, vegetable broth, diced tomatoes, and bay leaf. Stir to combine.
6. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 35-40 minutes until lentils are tender.
7. Remove bay leaf, stir in lemon juice, and season with salt to taste.
8. Serve hot, garnished with fresh parsley.

Storage

Store in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.

Reheating

Reheat on the stovetop over medium heat until warmed through, or microwave in a microwave-safe container, stirring occasionally.
