Hearty Slow Cooker Pork & Apple Stew

A comforting and hearty stew featuring tender pork and sweet apples, perfect for a cozy family dinner or a simple weeknight meal.

Ingredients

2 lbs pork shoulder, cubed
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
2 cups chicken broth
3 large carrots, sliced
3 medium potatoes, diced
2 apples, peeled and chopped
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
2 tbsp flour

Instructions

1. In a skillet, heat olive oil over medium-high heat and brown the pork cubes.
2. Transfer the browned pork to the slow cooker.
3. In the same skillet, sauté the onions and garlic until fragrant and translucent.
4. Add the onions and garlic to the slow cooker along with the chicken broth, carrots, potatoes, apples, thyme, rosemary, salt, and pepper.
5. Stir in the flour for thickness and ensure everything is well mixed.
6. Cover and cook on low for 8 hours or on high for 4 hours until the pork is tender.
7. Serve hot with fresh bread if desired.

Storage

Store leftover stew in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a saucepan over medium heat until piping hot, or microwave on medium power until heated through.
