Hearty Slow Cooker Chicken Delight

Ingredients
4 lbs chicken thighs, bone-in and skin-on
1 large onion, chopped
4 cloves garlic, minced
1 cup chicken broth
1/2 cup dry white wine
2 tbsp olive oil
2 tsp dried thyme
1 tsp dried rosemary
1 tsp salt
1/2 tsp black pepper
2 carrots, sliced
2 stalks celery, sliced
1 bay leaf
Instructions
1. In a large skillet, heat olive oil over medium heat. Sear chicken thighs on both sides until golden brown, about 3-4 minutes per side.
2. Transfer the chicken to the slow cooker. Add chopped onions and minced garlic to the skillet and sauté until the onions are translucent.
3. Pour in chicken broth and white wine, scraping up any browned bits from the skillet. Bring to a simmer and then pour over the chicken in the slow cooker.
4. Add thyme, rosemary, salt, pepper, carrots, celery, and bay leaf to the slow cooker. Stir to combine.
5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is tender and cooked through.
6. Remove bay leaf and serve the chicken with vegetables and sauce from the slow cooker.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a microwave-safe dish or in a saucepan over low heat until heated through.
