Hearty Slow-Cooked Short Ribs

Ingredients
4 lbs beef short ribs
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
1 cup beef broth
1 cup red wine
1/2 cup tomato paste
2 tbsp Worcestershire sauce
2 tsp dried thyme
1 tsp smoked paprika
Salt and pepper to taste
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Season short ribs with salt and pepper.
2. Brown the ribs on all sides, then transfer to the slow cooker.
3. In the same skillet, add onion and garlic; sauté until soft.
4. Stir in tomato paste, beef broth, and red wine, scraping up any browned bits from the skillet.
5. Pour the sauce over the ribs in the slow cooker.
6. Add Worcestershire sauce, thyme, and smoked paprika.
7. Cover and cook on low for 8 hours, or until ribs are tender.
8. Serve hot, garnished with fresh herbs if desired.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 325°F (165°C) until heated through, or in a microwave-safe dish in the microwave.
