Hearty Skillet Pork Chops

Ingredients
4 bone-in pork chops (about 1 inch thick)
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 large onion, thinly sliced
3 cloves garlic, minced
1 cup chicken broth
1 tablespoon butter
1 tablespoon fresh parsley, chopped
1 teaspoon dried thyme
Instructions
1. Season the pork chops with salt and black pepper on both sides.
2. Heat olive oil in a large skillet over medium-high heat.
3. Sear the pork chops in the skillet for 3-4 minutes on each side or until golden brown. Remove from the skillet and set aside.
4. In the same skillet, add sliced onions and cook until soft and translucent.
5. Add minced garlic and cook for an additional minute.
6. Pour in chicken broth, scraping up any browned bits from the bottom of the skillet.
7. Return the pork chops to the skillet, reduce heat to medium-low, cover, and simmer for about 10-12 minutes or until the pork is cooked through.
8. Stir in butter and sprinkle with fresh parsley and dried thyme before serving.
Storage
Store leftover pork chops in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a skillet over medium-low heat until warmed through, or microwave on a microwave-safe plate for 1-2 minutes.
