Hearty Shrimp and Sausage Jambalaya

A flavorful medley of shrimp, sausage, and vegetables simmered with spices, creating a rich and comforting rice dish perfect for any occasion.

Ingredients

1 lb shrimp, peeled and deveined
1 lb andouille sausage, sliced
2 tbsp vegetable oil
1 onion, chopped
1 bell pepper, chopped
2 celery stalks, chopped
3 cloves garlic, minced
2 cups long-grain white rice
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
2 tsp Cajun seasoning
1 bay leaf
Salt and pepper to taste
2 tbsp chopped parsley

Instructions

1. Heat oil in a large pot over medium heat. Add sausage and cook until browned.
2. Add onion, bell pepper, and celery; cook until softened.
3. Stir in garlic, rice, and Cajun seasoning; cook for 2 minutes.
4. Add chicken broth, tomatoes, bay leaf, salt, and pepper; bring to a boil.
5. Reduce heat to low, cover, and simmer for 20 minutes.
6. Add shrimp, cover, and cook for another 5 minutes until shrimp are pink and rice is tender.
7. Remove bay leaf, sprinkle with parsley, and serve hot.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat, adding a splash of chicken broth if needed to prevent drying.
