Hearty Sausage Delight
A comforting sausage casserole that brings a perfect blend of savory sausages, tender vegetables, and hearty beans, ideal for cozy family dinners.

Ingredients
1 lb pork sausages
2 tbsp olive oil
1 large onion, chopped
2 garlic cloves, minced
2 large carrots, sliced
2 celery stalks, chopped
1 bell pepper, chopped
1 can (14 oz) diced tomatoes
1 can (14 oz) white beans, drained and rinsed
1 cup chicken broth
1 tsp dried thyme
1 tsp smoked paprika
Salt and pepper to taste
1 tbsp fresh parsley, chopped
Instructions
1. Preheat oven to 350°F.
2. In a large skillet, heat olive oil over medium heat. Add sausages and brown on all sides. Remove and set aside.
3. In the same skillet, add onions and garlic; sauté until soft.
4. Add carrots, celery, and bell pepper. Cook until vegetables begin to soften.
5. Stir in diced tomatoes, white beans, chicken broth, thyme, smoked paprika, salt, and pepper.
6. Bring to a simmer.
7. Transfer the mixture to a casserole dish and place sausages on top.
8. Cover with foil and bake for 45 minutes.
9. Remove foil and bake for an additional 10 minutes.
10. Garnish with fresh parsley before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 350°F until heated through or in the microwave on medium power.
