Hearty Rustic Vegetable Soup

A classic hearty vegetable soup packed with wholesome ingredients, perfect for a cozy family dinner or to warm you up on a chilly day. This nutritious soup is easy to make, gluten-free, and ideal for meal prep.

Ingredients

2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
2 carrots, diced
2 stalks celery, diced
1 large potato, peeled and cubed
1 cup green beans, trimmed and cut into 1-inch pieces
1 zucchini, diced
1 (28 oz) can diced tomatoes
6 cups vegetable broth
1 tsp dried thyme
1 tsp dried basil
Salt and pepper to taste
1/4 cup chopped fresh parsley

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and garlic, and sauté until onions are translucent.
3. Stir in carrots and celery, cooking until they begin to soften.
4. Add the cubed potato and continue to cook for 5 minutes.
5. Stir in green beans, zucchini, and the can of diced tomatoes with its juice.
6. Pour in the vegetable broth and add dried thyme and basil.
7. Bring the soup to a boil, then reduce heat and let it simmer for 30 minutes.
8. Season with salt and pepper to taste.
9. Stir in fresh parsley just before serving.

Storage

Allow the soup to cool completely, then transfer to airtight containers and refrigerate for up to 5 days.

Reheating

Gently reheat the soup over medium heat on the stovetop, stirring occasionally until heated through.
