Ingredients

2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
3 carrots, diced
2 ribs celery, diced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf
4 cups vegetable broth
2 cups water
1 can (15 oz) cannellini beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 can (14.5 oz) diced tomatoes with juice
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped

Instructions

1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until onion is translucent.
2. Stir in carrots, celery, dried thyme, dried rosemary, and bay leaf. Cook for another 5 minutes, stirring occasionally.
3. Pour in vegetable broth and water, bring to a boil.
4. Add cannellini beans, kidney beans, black beans, and tomatoes with their juice.
5. Season with salt and black pepper, reduce heat to low, cover, and let simmer for 30 minutes.
6. Remove bay leaf, stir in fresh parsley before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 5 days.

Reheat individual servings in a microwave-safe bowl or reheat on the stove over medium heat until warm.
