Hearty Root Vegetable Beef Stew

Ingredients
2 lbs beef chuck, cut into 1-inch cubes
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
3 large carrots, sliced
2 parsnips, sliced
2 potatoes, diced
2 cups beef broth
1 cup red wine
2 tbsp tomato paste
1 tsp dried thyme
1 bay leaf
Salt and pepper to taste
2 tbsp fresh parsley, chopped
Instructions
1. Heat olive oil in a large pot over medium-high heat.
2. Add beef cubes, season with salt and pepper, and brown on all sides.
3. Remove beef and set aside.
4. In the same pot, add onions and garlic, sauté until translucent.
5. Stir in carrots, parsnips, and potatoes, cook for 5 minutes.
6. Return beef to pot, add beef broth, red wine, and tomato paste.
7. Add thyme and bay leaf, stir to combine.
8. Bring to a simmer, reduce heat, cover, and cook for 1.5 to 2 hours until beef is tender.
9. Adjust seasoning with salt and pepper, remove bay leaf before serving.
10. Garnish with fresh parsley before serving.
Storage
Allow to cool completely, then store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat on the stovetop over low heat, stirring occasionally, until warmed through. Optionally, add a splash of water or broth if needed.
