Hearty Root Vegetable & Beef Soup

Ingredients
1 lb beef stew meat
2 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
3 carrots, peeled and sliced
2 parsnips, peeled and sliced
2 potatoes, diced
1/2 tsp ground cumin
1/2 tsp smoked paprika
4 cups beef broth
1 cup water
1 can (15 oz) diced tomatoes
2 bay leaves
Salt and pepper to taste
Instructions
1. In a large pot, heat olive oil over medium-high heat.
2. Add beef stew meat and brown on all sides, then remove from pot.
3. In the same pot, add onions and garlic, sauté until onions are translucent.
4. Stir in carrots, parsnips, and potatoes, cooking for another 5 minutes.
5. Add cumin and smoked paprika, stirring to coat the vegetables evenly.
6. Pour in beef broth, water, and diced tomatoes. Return beef to the pot.
7. Add bay leaves, salt, and pepper. Bring to a boil.
8. Reduce heat to low, cover, and simmer for 90 minutes or until beef is tender.
9. Remove bay leaves before serving.
Storage
Store cooled soup in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat soup gently on the stove over medium heat, stirring occasionally until heated through.
