Ingredients

1 medium green cabbage, cored and chopped
1 cup quinoa, rinsed
1 lb ground turkey
1 large onion, diced
3 cloves garlic, minced
4 cups chicken broth
2 cups tomato sauce
1 cup diced tomatoes
2 carrots, sliced
2 celery stalks, sliced
1 tbsp olive oil
1 tsp thyme
1 tsp paprika
Salt and pepper to taste
1/4 cup fresh parsley, chopped

Instructions

1. In a large pot, heat olive oil over medium heat. Add diced onion and garlic, sauté until translucent.
2. Add ground turkey, cooking until browned.
3. Stir in quinoa, chicken broth, tomato sauce, diced tomatoes, carrots, celery, thyme, paprika, salt, and pepper.
4. Bring to a boil, then reduce heat and simmer for 20 minutes.
5. Add chopped cabbage, cover, and simmer for another 30 minutes or until cabbage and quinoa are tender.
6. Stir in fresh parsley before serving.

Storage

Store in an airtight container in the refrigerator for up to 4 days.

Reheating

Reheat gently on the stove over medium heat, stirring occasionally until hot.
