Ingredients

5 lbs russet potatoes
2 cups shredded cheddar cheese
1 cup sour cream
1 cup heavy cream
1/2 cup unsalted butter
1 medium onion, finely chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 cup chopped fresh parsley for garnish

Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
2. Peel and thinly slice the potatoes evenly.
3. In a large saucepan over medium heat, melt the butter and sauté the onions and garlic until translucent.
4. Stir in the heavy cream, sour cream, salt, pepper, and paprika, and heat until just combined.
5. Layer half of the potato slices in the prepared baking dish.
6. Pour half of the cream mixture over the potatoes and sprinkle with cheddar cheese.
7. Repeat the layers with the remaining potatoes, cream mixture, and cheese.
8. Cover with aluminum foil and bake for 45 minutes.
9. Remove foil and bake for an additional 15 minutes or until the cheese is bubbly and golden brown.
10. Let cool for 10 minutes before serving. Garnish with fresh parsley.

Storage

Store leftover casserole in an airtight container in the refrigerator for up to 3 days.

Reheating

Preheat oven to 350°F (175°C) and reheat the casserole for 15-20 minutes or until warmed through.
