Hearty Potato Broccoli Cheese Soup

Ingredients

2 tablespoons unsalted butter
1 medium onion, chopped
2 cloves garlic, minced
3 cups chicken broth
4 cups diced potatoes
3 cups broccoli florets
2 cups shredded cheddar cheese
1 cup whole milk
Salt and pepper to taste
1 tablespoon olive oil
Chopped chives for garnish

Instructions

1. In a large pot, melt butter over medium heat. Add chopped onion and garlic; sauté until softened.
2. Pour in chicken broth and bring to a boil. Add diced potatoes and cook until tender, about 15 minutes.
3. In a skillet, heat olive oil and sauté broccoli florets until bright green and slightly tender.
4. Add broccoli to the pot with potatoes and stir in milk.
5. Gradually add shredded cheddar cheese, stirring continuously until melted and smooth.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with chopped chives.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.
