Hearty Pork Stew
A comforting and savory stew packed with tender pork, fresh vegetables, and aromatic herbs, perfect for warming up on a chilly day.

Ingredients
2 lbs pork shoulder, cubed
3 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
3 carrots, sliced
3 celery stalks, chopped
2 large potatoes, cubed
1 cup frozen peas
4 cups chicken stock
1 tbsp tomato paste
1 tsp dried thyme
1 tsp dried rosemary
2 bay leaves
Salt and pepper to taste
Instructions
1. Heat 2 tablespoons of olive oil in a skillet over medium-high heat.
2. Brown the pork cubes in batches, setting them aside when done.
3. In the same skillet, add the remaining olive oil and sauté the onions until translucent.
4. Add the garlic, carrots, and celery, and cook for another 3 minutes.
5. Transfer the sautéed vegetables and browned pork to the slow cooker.
6. Add the potatoes, chicken stock, tomato paste, thyme, rosemary, bay leaves, salt, and pepper.
7. Stir everything together, ensuring the ingredients are well mixed.
8. Cover and cook on low for 6-8 hours or until the pork is tender.
9. About 30 minutes before serving, add the peas to the slow cooker.
10. Remove bay leaves before serving.
Storage
Store the leftover pork stew in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, warm in a saucepan over medium heat until heated through, or microwave on high, stirring occasionally, until hot.
