Hearty Pork and Sauerkraut Delight

Ingredients

2 lbs pork shoulder
1 tbsp olive oil
1 large onion, thinly sliced
2 cloves garlic, minced
2 cups sauerkraut, drained
1/2 cup apple cider
1 tbsp caraway seeds
Salt and pepper to taste

Instructions

1. Preheat your oven to 325°F.
2. Heat olive oil in a large ovenproof pot over medium-high heat.
3. Season pork shoulder with salt and pepper, then brown on all sides.
4. Remove pork and set aside.
5. In the same pot, add onion and garlic; sauté until soft and fragrant.
6. Stir in sauerkraut, apple cider, and caraway seeds.
7. Return pork to the pot, nestling it into the sauerkraut mixture.
8. Cover and bake in the preheated oven for 2.5 to 3 hours, until pork is tender.
9. Rest pork for 10 minutes before slicing and serve with sauerkraut.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently in a skillet over medium heat or in the microwave until heated through.
