Hearty Pea and Ham Soup

Ingredients
1 lb dried split peas
1 meaty ham bone or 2 cups diced ham
1 large onion, chopped
2 carrots, diced
2 stalks celery, diced
2 cloves garlic, minced
8 cups chicken stock
1 bay leaf
1/2 tsp dried thyme
Salt and pepper to taste
Instructions
1. Rinse split peas under cold water and set aside.
2. In a large pot, heat a splash of olive oil over medium heat, add the onion, carrots, and celery, and sauté until softened, about 5 minutes.
3. Add garlic and cook for an additional minute.
4. Add the ham bone or diced ham to the pot along with the peas, chicken stock, bay leaf, and thyme.
5. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, stirring occasionally, until peas are tender and soup has thickened.
6. Remove the ham bone, shred any meat from the bone, and return the meat to the soup.
7. Season with salt and pepper to taste.
8. Serve hot, garnished with fresh herbs if desired.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat on the stove over medium heat until warmed through, adding a bit of stock or water if needed to adjust consistency.
