Hearty Paprika Beef Goulash

Ingredients

2 lbs beef chuck, cut into 1-inch cubes
2 tbsp olive oil
2 large onions, chopped
3 cloves garlic, minced
2 red bell peppers, sliced
1 can (14.5 oz) diced tomatoes
3 cups beef broth
3 tbsp smoked paprika
1 tsp caraway seeds
1 tsp salt
1/2 tsp ground black pepper
1/4 cup all-purpose flour
1/2 cup sour cream
1 tbsp apple cider vinegar
1/4 cup fresh parsley, chopped

Instructions

1. Heat olive oil in a large pot over medium-high heat.
2. Add beef cubes and brown on all sides, then remove and set aside.
3. In the same pot, sauté onions until translucent, then stir in garlic, red bell peppers, and caraway seeds.
4. Return the beef to the pot and sprinkle with flour, stirring to coat.
5. Add smoked paprika, salt, and pepper, and mix well.
6. Pour in diced tomatoes and beef broth, bringing the mixture to a boil.
7. Reduce heat to low, cover, and simmer for 2 hours, or until beef is tender.
8. Stir in sour cream and apple cider vinegar before serving.
9. Garnish with fresh parsley.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Gently reheat on the stove over low heat until warmed through, or microwave on medium power.
