Hearty Oxtail Soup
Hearty Oxtail Soup is a traditional dish simmered to perfection with tender oxtail, vegetables, and aromatic herbs, making it a comforting choice for cold days.

Ingredients
2 lbs oxtail
1 large onion, chopped
2 carrots, sliced
2 celery stalks, sliced
4 garlic cloves, minced
1 lb potatoes, peeled and diced
1 bay leaf
1 tsp thyme
6 cups beef broth
Salt and pepper to taste
2 tbsp vegetable oil
2 tbsp tomato paste
2 tbsp Worcestershire sauce
Instructions
1. Heat oil in a large pot over medium heat and brown the oxtail pieces on all sides.
2. Remove the oxtail and set aside. In the same pot, sauté onion, carrots, celery, and garlic until softened.
3. Stir in the tomato paste and cook for another minute.
4. Return the oxtail to the pot, add the beef broth, bay leaf, thyme, Worcestershire sauce, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for about 3 hours, or until the oxtail is tender.
6. Add potatoes and continue simmering for another 30 minutes.
7. Remove the bay leaf, adjust seasoning, and serve hot.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a pot over medium heat until hot, adding a little broth if needed to thin.
