Prep time: 15 minutes
Cook time: 25 minutes
Serves: 12

Ingredients

2 cups old-fashioned rolled oats
1 cup chopped nuts (almonds, walnuts, or pecans)
1/2 cup honey
1/4 cup packed brown sugar
1/4 cup unsalted butter
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 cup dried fruit (raisins, cranberries, or apricots)

Instructions

1. Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper.
2. Spread the rolled oats and chopped nuts evenly on a baking sheet. Toast them in the preheated oven for about 8-10 minutes until lightly golden.
3. In a medium saucepan, combine honey, brown sugar, unsalted butter, vanilla extract, and salt. Cook over medium heat until the sugar is dissolved and the mixture is bubbly.
4. In a large bowl, mix the toasted oats and nuts with the honey-sugar mixture until well coated.
5. Stir in the dried fruit until evenly distributed.
6. Transfer the mixture into the prepared baking pan. Press it down firmly to ensure the bars hold together.
7. Bake for 20-25 minutes until the edges are lightly browned.
8. Allow the bars to cool in the pan for about 10 minutes before transferring to a cutting board to cool completely.
9. Once fully cooled, cut into bars of desired size using a sharp knife.
