Hearty Mushroom Salisbury Steak

Ingredients

1 1/2 lbs ground beef
1/2 cup finely chopped onion
1/2 cup breadcrumbs
1 large egg
1 tbsp Worcestershire sauce
1 tsp salt
1/2 tsp ground black pepper
2 tbsp olive oil
1 cup beef broth
1 tbsp cornstarch
1/4 cup water
8 oz button mushrooms, sliced
1 tbsp butter

Instructions

1. In a large bowl, combine ground beef, onion, breadcrumbs, egg, Worcestershire sauce, salt, and pepper. Mix well and shape into 4 patties.
2. Heat olive oil in a large skillet over medium heat. Add patties and cook until browned on both sides, about 4 minutes per side. Remove from skillet.
3. In the same skillet, melt butter and add mushrooms, cooking until tender.
4. In a small bowl, mix beef broth and cornstarch until smooth. Add to the skillet with mushrooms, stirring until sauce thickens.
5. Return patties to the skillet, spoon sauce over them, and simmer on low heat for 10 minutes.
6. Serve hot, garnished with fresh parsley if desired.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat until warmed through, or microwave on high for 2 minutes.
