Hearty Minestrone

Ingredients

2 tbsp olive oil
1 large onion, finely chopped
2 carrots, diced
2 stalks celery, diced
3 cloves garlic, minced
1 zucchini, diced
1 yellow bell pepper, chopped
1 cup green beans, cut into 1-inch pieces
1 can (14 oz) diced tomatoes
4 cups vegetable broth
1 can (15 oz) cannellini beans, drained and rinsed
1 tsp dried oregano
1 tsp dried basil
Salt and pepper to taste
1 cup small pasta shells
2 cups kale, chopped
1/4 cup grated Parmesan cheese
Fresh basil leaves for garnish, optional

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add onion, carrots, and celery; sauté until onions are translucent.
3. Stir in garlic, zucchini, bell pepper, and green beans; cook for 5 minutes.
4. Pour in diced tomatoes and vegetable broth; bring to a boil.
5. Stir in cannellini beans, oregano, basil, salt, and pepper.
6. Add pasta shells and cook until al dente, about 10 minutes.
7. Stir in kale and cook until wilted, about 2 minutes.
8. Adjust seasoning, adding more salt and pepper if needed.
9. Serve hot, garnished with Parmesan and fresh basil if desired.

Storage

Store in an airtight container in the refrigerator for up to 4 days.

Reheating

Reheat in a pot over medium heat, stirring occasionally, until thoroughly heated.
