Hearty Lentil Stew

A nutritious and comforting lentil stew packed with vegetables and seasoned with aromatic herbs, perfect for a cozy family meal and optimized for a warming and healthy dinner option.

Ingredients

1 cup dry lentils (rinsed and drained)
4 cups vegetable broth
1 medium onion (chopped)
2 cloves garlic (minced)
2 carrots (sliced)
2 stalks celery (sliced)
1 can diced tomatoes (14.5 oz)
1 bay leaf
1 tsp dried thyme
1 tsp ground cumin
Salt and pepper to taste
2 tbsp olive oil

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion, minced garlic, sliced carrots, and sliced celery; sauté until vegetables are tender, about 8 minutes.
3. Stir in rinsed lentils, diced tomatoes (with juice), vegetable broth, bay leaf, thyme, and cumin.
4. Bring to a boil, then reduce the heat and simmer until lentils are tender, approximately 40 minutes.
5. Season with salt and pepper to taste, and remove the bay leaf before serving.

Storage

Allow the stew to cool to room temperature, then store in an airtight container in the refrigerator for up to 4 days.

Reheating

Reheat gently on the stove over medium heat, stirring occasionally, until heated through. Alternatively, microwave individual portions on medium power.
