Hearty Lentil Soup

Ingredients
1 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 tsp ground cumin
1 tsp paprika
1/2 tsp ground coriander
1 bay leaf
1 1/2 cups dry lentils, rinsed
6 cups vegetable broth
1 can (14.5 oz) diced tomatoes
Salt and pepper to taste
2 tbsp fresh parsley, chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add the onion and garlic and sauté until soft and translucent, about 5 minutes.
3. Stir in carrots and celery, cooking for another 5 minutes.
4. Add cumin, paprika, coriander, and bay leaf, stirring to coat the vegetables.
5. Pour in the lentils, vegetable broth, and diced tomatoes, bring to a boil.
6. Reduce heat to low, cover, and simmer until lentils are tender, about 30 minutes.
7. Season with salt and pepper to taste.
8. Remove bay leaf and stir in fresh parsley before serving.
Storage
Allow the soup to cool completely before transferring to an airtight container and refrigerating for up to 5 days.
Reheating
Reheat gently on the stovetop over low heat, stirring occasionally, until warmed through.
