Hearty Lentil Delight
A heartwarming lentil soup that combines tender lentils with aromatic vegetables and a blend of herbs, perfect for a cozy meal any time of the year.

Ingredients
1 cup dried lentils
4 cups vegetable broth
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
2 cloves garlic, minced
1 bay leaf
1 tsp thyme
1 tbsp olive oil
Salt and pepper to taste
Instructions
1. Rinse the lentils thoroughly under cold water.
2. In a large pot, heat olive oil over medium heat.
3. Add onion, carrots, and celery; sauté for about 5 minutes until softened.
4. Add garlic and sauté for another minute.
5. Stir in the lentils, vegetable broth, bay leaf, and thyme.
6. Bring to a boil, then reduce heat to a simmer.
7. Cook for 30-40 minutes until lentils are tender.
8. Season with salt and pepper to taste.
9. Remove bay leaf before serving.
Storage
Store in an airtight container in the refrigerator for up to 5 days.
Reheating
Reheat gently on the stove over medium heat until warmed through.
