Hearty Lentil & Stuffed Green Pepper Soup

A delightful twist on a classic soup, packed with hearty lentils, vibrant green peppers, and a medley of spices to create a comforting and nutritious meal.

Ingredients

2 tbsp olive oil
1 lb ground turkey
1 cup diced onions
1 cup diced carrots
1 cup diced celery
2 cloves garlic, minced
2 large green bell peppers, chopped
1 cup dry lentils
1 can (14.5 oz) diced tomatoes
6 cups chicken broth
1 tsp dried oregano
1 tsp smoked paprika
1/2 tsp cumin
Salt and pepper to taste
1 bay leaf
1 tbsp lemon juice
Fresh parsley for garnish

Instructions

1. Heat olive oil in a large pot over medium heat. Add ground turkey and cook until browned.
2. Add onions, carrots, and celery to the pot. Sauté until vegetables are tender.
3. Stir in garlic and cook for another minute.
4. Add green bell peppers and cook for 2-3 minutes until slightly softened.
5. Stir in lentils, diced tomatoes, chicken broth, oregano, smoked paprika, cumin, salt, and pepper. Add bay leaf.
6. Bring to a boil, then reduce heat and let it simmer for 30-40 minutes until lentils are tender.
7. Remove the bay leaf, stir in lemon juice, and adjust seasoning as needed.
8. Serve hot, garnished with fresh parsley.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stove over medium heat or in the microwave until hot.
