Ingredients

1 tablespoon olive oil
1 pound ground beef
1/2 teaspoon salt
1/4 teaspoon black pepper
1 onion, diced
3 cloves garlic, minced
4 cups chicken broth
1 can (14.5 oz) crushed tomatoes
1/2 cup tomato paste
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes
8 ounces mafalda or broken lasagna noodles
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
2 tablespoons chopped fresh parsley

Instructions

1. Heat olive oil in a large pot over medium heat. Add ground beef, salt, and pepper; cook until browned.
2. Add onion and garlic; sauté until softened.
3. Stir in chicken broth, crushed tomatoes, tomato paste, basil, oregano, and red pepper flakes; bring to a boil.
4. Add pasta to the pot; reduce heat and simmer until pasta is al dente.
5. In a small bowl, mix ricotta and Parmesan cheese.
6. Serve soup topped with a dollop of ricotta mixture, mozzarella cheese, and fresh parsley.

Storage

Store in an airtight container in the refrigerator for up to 3 days.
