Ingredients
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
1 bell pepper, chopped
2 medium carrots, diced
2 ribs celery, diced
1 jalapeno, seeded and minced
2 cans (15 oz each) kidney beans, rinsed and drained
2 cans (15 oz each) black beans, rinsed and drained
1 can (28 oz) diced tomatoes
2 cups vegetable broth
2 tbsp tomato paste
2 tsp ground cumin
2 tsp chili powder
1 tsp smoked paprika
1 tsp salt
1/2 tsp black pepper
1/2 tsp cayenne pepper
1 bay leaf
1/4 cup fresh cilantro, chopped (optional)
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until onion is translucent.
2. Stir in bell pepper, carrots, celery, and jalapeno. Cook for about 5 minutes until vegetables are slightly tender.
3. Add kidney beans, black beans, diced tomatoes, vegetable broth, and tomato paste to the pot. Stir to combine.
4. Season with cumin, chili powder, smoked paprika, salt, black pepper, cayenne pepper, and add the bay leaf.
5. Bring the mixture to a boil, then reduce heat and let it simmer uncovered for 30 minutes, stirring occasionally.
6. Remove the bay leaf, and adjust seasoning if needed.
7. Serve hot, garnished with fresh cilantro if desired.
Storage
Transfer leftover chili to an airtight container and refrigerate for up to 5 days or freeze for up to 3 months.
Reheating
Reheat on the stove over medium heat until warmed through, or microwave in a microwave-safe dish, stirring occasionally.
