Hearty Homestyle Vegetable Soup
A nourishing and simple vegetable soup made with a mix of fresh produce and slow-cooked to perfection. Perfect for a comforting meal.

Ingredients
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
3 carrots, sliced
2 celery stalks, chopped
2 potatoes, diced
1 zucchini, chopped
1 cup green beans, trimmed and halved
1 can (14.5 oz) diced tomatoes
6 cups vegetable broth
2 tsp salt
1 tsp black pepper
1 tsp thyme
1 bay leaf
1/4 cup fresh parsley, chopped
Instructions
1. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until translucent.
2. Transfer onions and garlic to slow cooker. Add carrots, celery, potatoes, zucchini, and green beans.
3. Pour in diced tomatoes, vegetable broth, salt, pepper, thyme, and bay leaf.
4. Stir ingredients together, cover, and set slow cooker to low. Cook for 6-8 hours.
5. Before serving, remove bay leaf and stir in fresh parsley.
Storage
Store cooled soup in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat soup gently in a pot over low heat until warmed through, or microwave on medium power.
