1 lb beef stew meat, cubed
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
4 cups beef broth
2 cups water
2 large carrots, sliced
3 stalks celery, diced
2 large potatoes, cubed
1 can (14.5 oz) diced tomatoes
1 cup frozen peas
1 cup green beans, chopped
1 tsp dried thyme
1 bay leaf

Instructions

1. Heat olive oil in a large pot over medium heat. Brown the beef stew meat, then remove and set aside.
2. In the same pot, add onions and garlic; sauté until fragrant.
3. Pour in beef broth and water; bring to a boil.
4. Add browned beef, carrots, celery, potatoes, tomatoes, thyme, and bay leaf.

6. Add peas and green beans; cook for another 15 minutes.
