Ingredients
1 lb dried pinto beans
4 cups water
1 medium onion, chopped
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tsp cumin
1 bay leaf
1/4 tsp cayenne pepper
1 tbsp olive oil
Instructions
1. Rinse and sort the pinto beans, removing any debris.
2. Combine the beans, water, onion, garlic, salt, black pepper, cumin, bay leaf, cayenne pepper, and olive oil in a slow cooker.
3. Cover and cook on low for 8-9 hours or on high for 4-5 hours until the beans are tender.
4. Remove the bay leaf before serving and adjust seasoning if necessary.
Storage
Store leftover pinto beans in an airtight container in the refrigerator for up to 5 days.
Reheating
To reheat, place beans in a saucepan over medium heat, stirring occasionally until heated through.
