Hearty Homestyle Meatball Soup

A comforting and robust meatball soup featuring tender beef meatballs, hearty vegetables, and a savory broth, perfect for a cozy family meal.

Ingredients

1 lb ground beef
1/4 cup bread crumbs
1/4 cup grated Parmesan cheese
1 egg
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
2 tbsp olive oil
1 onion, chopped
2 carrots, sliced
2 celery stalks, sliced
3 cloves garlic, minced
6 cups beef broth
1 can (14.5 oz) diced tomatoes
1 cup small pasta shells
1 tsp Italian seasoning
Salt and pepper to taste

Instructions

1. In a bowl, combine ground beef, bread crumbs, Parmesan cheese, egg, salt, black pepper, garlic powder, and onion powder.
2. Shape mixture into small meatballs, about 1 inch in diameter.
3. Heat olive oil in a large pot over medium heat. Add meatballs and cook until browned on all sides. Remove meatballs and set aside.
4. In the same pot, add onion, carrots, celery, and garlic. Sauté until vegetables are tender, about 5 minutes.
5. Return meatballs to the pot, add beef broth, diced tomatoes, and bring to a boil.
6. Stir in pasta shells and Italian seasoning. Reduce heat and simmer for 15 minutes, or until pasta is cooked.
7. Season with salt and pepper to taste. Serve hot.

Storage

Allow soup to cool completely, then store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stove over medium heat, stirring occasionally, until heated through. Add additional broth if needed.
