Hearty Homestyle Chicken Casserole

Ingredients
1 whole roasted chicken, deboned and shredded
2 cups carrots, sliced
1 cup celery, chopped
1 cup onions, diced
1 cup peas
2 cups chicken broth
1 cup heavy cream
1/2 cup all-purpose flour
1/2 cup unsalted butter
1 cup breadcrumbs
1 tsp salt
1/2 tsp black pepper
1/4 tsp thyme
1/4 tsp rosemary
Instructions
1. Preheat the oven to 350°F (175°C).
2. In a large skillet over medium heat, melt the butter and sauté the onions, carrots, and celery until tender, about 8 minutes.
3. Stir in the flour, thyme, rosemary, salt, and black pepper, cooking for 2 minutes to eliminate raw flour taste.
4. Gradually whisk in the chicken broth and heavy cream, cooking until the mixture thickens.
5. Add the shredded chicken and peas, stirring to combine evenly.
6. Transfer the mixture to a greased 9x13-inch baking dish.
7. Sprinkle the breadcrumbs evenly on top of the casserole.
8. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the filling is bubbly.
9. Allow to cool slightly before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a 350°F (175°C) oven for 20 minutes or until thoroughly heated through.
