Hearty Homestyle Casserole

Ingredients

1 lb ground beef
1 cup diced onions
1 cup sliced carrots
2 cups diced potatoes
1 cup green peas
1 can (10.75 oz) condensed cream of mushroom soup
1/2 cup milk
1 cup shredded cheddar cheese
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil

Instructions

1. Preheat oven to 350°F.
2. In a large skillet, heat olive oil over medium heat.
3. Add ground beef and cook until browned.
4. Stir in onions and carrots, cooking until vegetables are softened.
5. Add potatoes and green peas, stirring to combine.
6. In a bowl, mix the condensed soup with milk, then pour over the meat and vegetable mixture.
7. Season with salt and black pepper, mixing thoroughly.
8. Transfer the mixture to a greased baking dish.
9. Top with shredded cheddar cheese evenly.
10. Cover with aluminum foil and bake for 30 minutes.
11. Remove foil and bake for another 10 minutes until cheese is bubbly and golden.
12. Let cool for a few minutes before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat individual portions in the microwave for 2-3 minutes or until heated through, or bake at 350°F for 15-20 minutes.
