Ingredients
1 lb dried navy beans
8 cups water
1 large onion, chopped
1/2 lb bacon, chopped
1/2 cup molasses
1/2 cup brown sugar
1/4 cup ketchup
1 tbsp yellow mustard
1 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper
1/4 tsp smoked paprika
2 cups water
Instructions
1. Preheat oven to 300°F.
2. Rinse and sort the dried navy beans.
3. In a large pot, cover beans with 8 cups of water and bring to a boil. Boil for 2 minutes, then remove from heat and let stand for 1 hour.
4. Drain and rinse beans, then transfer to a large Dutch oven.
5. In a skillet, cook chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving drippings in the skillet.
6. Sauté chopped onion in bacon drippings until translucent.
7. Add cooked onion, bacon, molasses, brown sugar, ketchup, mustard, salt, black pepper, cayenne, and smoked paprika to the Dutch oven with beans.
8. Add 2 cups of water and stir to combine.
9. Cover the Dutch oven and bake in preheated oven for 5-6 hours, stirring occasionally, until beans are tender and sauce is thickened.
10. Adjust seasoning to taste before serving.
Storage
Store leftover baked beans in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat baked beans in a saucepan over low heat, stirring occasionally, until heated through. Add a splash of water if needed to reach desired consistency.
