Hearty Homestead Soup

A rich, savory soup that combines the classic flavors of roasted chicken, tender vegetables, and aromatic herbs. This comforting dish is perfect for chilly evenings.

Serves: 4

Ingredients

1.5 lbs chicken thighs
2 carrots, sliced
2 stalks celery, chopped
1 large onion, diced
4 cloves garlic, minced
3 cups chicken broth
1 cup water
1 tsp dried thyme
1 tsp dried rosemary
Salt to taste
Pepper to taste
1 cup frozen peas
1 tbsp olive oil

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add chicken thighs and cook until browned, about 5 minutes per side. Remove and set aside.
3. In the same pot, add onion, garlic, carrots, and celery. Cook until vegetables are tender, about 8 minutes.
4. Return chicken to the pot and add chicken broth, water, thyme, rosemary, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for 30 minutes.
6. Add peas and cook for an additional 5 minutes.
7. Remove chicken, shred it, and return it to the soup. Stir well before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stovetop over medium heat, stirring occasionally, until warmed through.
