Hearty Homestead Bean Soup

Ingredients
1 lb dried navy beans
8 cups water
1 large onion, chopped
2 cloves garlic, minced
2 carrots, sliced
2 stalks celery, sliced
1 smoked ham hock
1 bay leaf
1 tsp salt
1/2 tsp black pepper
1/4 cup chopped parsley
1 tbsp olive oil
Instructions
1. Rinse the navy beans under cold water and remove any debris.
2. In a large pot, add the beans and cover with water. Bring to a boil, then reduce heat and simmer for 10 minutes.
3. Drain and rinse the beans.
4. Heat olive oil in the pot over medium heat, and sauté onion, garlic, carrots, and celery until softened, about 5 minutes.
5. Add the beans, ham hock, bay leaf, salt, and pepper. Cover with 8 cups of water.
6. Bring to a boil, then reduce heat and simmer uncovered for 1.5 to 2 hours, until beans are tender.
7. Remove the ham hock, and shred the meat. Return the meat to the pot and discard the bone.
8. Stir in the chopped parsley before serving.
Storage
Let the soup cool completely, then transfer to airtight containers and store in the refrigerator for up to 4 days.
Reheating
Reheat the soup on the stove over medium heat until hot, stirring occasionally. Alternatively, microwave individual portions in a microwave-safe dish until heated through.
