Hearty Heritage Pot Roast

A wholesome and traditional pot roast recipe that stews to perfection, delivering tender beef and flavorful vegetables. Slow-cooked to bring out a rich taste that reminds you of comforting home-cooked meals.

Ingredients

3 lbs chuck roast
5 large carrots, peeled and cut into chunks
4 large potatoes, peeled and cut into quarters
1 large onion, chopped
4 cloves garlic, minced
3 cups beef broth
1 tbsp Worcestershire sauce
1 tsp salt
1 tsp black pepper
2 tbsp vegetable oil
2 sprigs fresh thyme
1 bay leaf

Instructions

1. Heat a large skillet over medium-high heat and add vegetable oil.
2. Season the chuck roast with salt and black pepper.
3. Brown the roast on all sides in the skillet, about 4 minutes per side.
4. Place the browned roast in the slow cooker.
5. Add carrots, potatoes, onion, and garlic around the roast.
6. Pour beef broth and Worcestershire sauce over the roast and vegetables.
7. Add thyme and bay leaf.
8. Cover and cook on low for 8 hours, or until the meat is tender and easily shredded.
9. Remove the roast and vegetables from the cooker. Discard bay leaf and thyme sprigs.
10. Slice the roast or shred it, and serve with the vegetables.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat leftovers in a saucepan over medium heat until warmed through. Alternatively, microwave in a covered dish, stirring occasionally, until heated.
